500 really isn't that bad unless you're set to lower calories. I usually exceed that when I have eggs (adding in sausage, cheese, toast). Many people prefer larger breakfasts and smaller lunches/dinners as well.

Healthy isn't determined by the number of calories.

Meals aren't a set number of calories. You can eat as much as you like when you like, just make the day total fit in your caloric allowance.

If you have a problem with "running out" of calories, pre plan. Log your food before the day starts

My oatmeal amounts to that much because I use full fat milk, dried fruits and nuts. I feel you. But I really enjoy my bowl of oats and make it fit into my day

500 calories is not too many calories! You have to eat girl your body needs food. What you ate is super healthy as well so don't let it get to ya it won't effect your body negatively at all. Have a wonderful day and enjoy your food!! :D I use http://iifym.com/iifym-calculator/ to count my macros. I'm not sure if that's something that would interest you but I find it super easy and helpful bc it makes sure you're eating the right amount of food your body absolutely needs to reach your goal!
