There is a cookie here in middle east called KLISHA i made it today but in a healthy version, the were delicious they were gone in a minute, if anyone want to try this tell me to give u the recipe :)

    Klisha recipe:
    3 cups whole wheat flour
    1 and a half cup of canolla oil or sunflower oil
    3/4 cup brown sugar
    3 tsp grinded cinnamon
    3 tsp grinded anise
    2 tsp grinded fennel
    1/2 tsp grinded cloves
    1/4 tsp grinded nutmeg
    ...................……
    Mix the oil and the sugar first for 5 minutes at a high speed then add all the other Ingredients and mix them at a medium speed untill a hard dough, cover the dough and make it rest for one hour, form your cookies as you want but dont make them very thick, bake them at 180c for 25 mins

    I think I have made these before, but it also had semolina in it. Added great texture to the cookie.

    Could you try replacing half the oil with apple sauce? It would change the texture a bit and the cookies would dry out sooner.

    I think it will make it a little bit harder but it will still be tasty, try replacing the apple sauce with half cup of warm water and add to it 3 tsp of rose water
