Red peppers ideas please

I have 5 red peppers in my fridge. Any ideas what to do with them?

    I can't recall all the details, but hubby made some a while back stuffed with couscous instead of hamburger. Very tasty!

    You can roast them, peel and de-seed. Then you can add to salads, hummus, sandwiches.

    Fajitas! Use corn tortillas if you need to keep calories down.

    I also second grilled peppers. I fried up some with a red onion with a little canola oil and had it with grilled Italian sausages. Now that's good eatin'.

    I chop'em up and put them in eggs or just dip them in hummus. You could also do lean turkey meatballs and chop them and add it to that. Or I also do Mexican style veggie soup with it.

    Fajitas! Or stir fry. You can also slice them up and put them in a plastic freezer bag for the next time you want to cook with them. I don't think frozen-then-thawed peppers are all that good to eat raw because it messes up the crispy texture, but they are just fine cooked in recipes.

    This Roasted Red Pepper soup is SO GOOD and freezes really well (as do stuffed peppers!)

    I just like chopping them up into strips and eating them raw. Love the crunch and the taste. Roasted red peppers are yummy too.

    Stuffed Pepper Soup

    1/2 pound ground round (or turkey) 2 cups chopped green (or red) bell pepper 1 cup chopped onion 1/4 teaspoon black pepper 1 (14-ounce) can less-sodium beef broth 1 (14.5-ounce) can diced tomatoes, undrained 1 (10 3/4-ounce) can tomato soup, undiluted 1 1/2 cups hot cooked white rice

    Heat a small Dutch oven over medium-high heat. Add beef; cook 3 minutes or until browned, stirring to crumble. Add chopped green bell pepper and onion; cook 8 minutes or until vegetables are tender. Stir in black pepper, less-sodium beef broth, diced tomatoes, and tomato soup; bring to a boil. Reduce heat, and simmer 45 minutes.
    Spoon 1/4 cup hot cooked white rice into each of 6 bowls; top with 1 cup soup.

    *Variations: for tomato soup I use Amy's or Progresso - Campbell's too sweet (IMO). I also like to add some basil. You can use brown rice.

    My oldest son does this. We can't keep them in the house. He eats them like candy. Of course, 17-year-olds eat everything like that. :)

    I cut them into rings and fry eggs in the middle and serve with cheese and other garnish options on top. Bacon bits, chives, and pulled pork have all been popular at my house. It's a great "fridge cleaning day" breakfast.

    Do, as several people suggested, at least try one raw, on its own or as a dip for hummus. They are so much sweeter than the green bells (which are actually unripe red bells). But for the rest, you can do anything with them that you'd do with a green bell pepper. :)

    there's a yummy recipe on pinterest - search drunken noodles. it has sausage and lots of peppers in a tomato-ey sauce... you don't even need the pasta - the sauce is so good and hearty on it's own.

    there's also the pioneer woman's cajun chicken pasta that would use up 2 of those peppers - one of my favorite recipes.

    otherwise, I'd roast or grill them. or dice them up and freeze them for future recipes that call for peppers - like goulash or jambalaya
