Eating in a calorie deficit will help you lose fat. Carbs values are irrelevant to that. For overall health you need a well balanced diet, but the only thing that will help you lose fat is ingesting fewer calories than your body uses.

Eating fewer calories than you burn will help you lose fat. If you think you're eating too many carbs, you can cut back.

In general, it's the total amount of calories that count toward weight gain or loss. Technically it doesn't matter whether those calories are in the form of carbs, fat, or protein.

As for carbs vs. protein vs. fat, in general protein is good for preserving muscle mass while losing weight. Fat is OK, if only to make you feel full and suppress the tendency to overeat. Some fat is also good for nutrition in general.

Carbs are basic energy; everyone needs to eat carbs to live. But eating too many carbs could spike up your blood glucose levels, which could overload those bodily functions that are supposed to convert that glucose into energy. That excess glucose then becomes synthesized into fat.

If I were you, however, I wouldn't worry too much about carbs as long as you are burning more calories than you eat. Just make sure you're getting plenty of protein if you're actively exercising.
