What's a great veggie main for a hot day?

Hosting vegetarians for dinner, and I have no idea how to plan the menu. Eggs and cheese are ok.

I thought about a chili, but it might be hot tomorrow... Veggie burgers? Lentil salad, but maybe that's not enough?

Or frittatas, maybe? But it gets hot in my place when I cook, I don't want for them to be uncomfortable while I'm cooking/they're waiting, so would prefer something that could be prepared and just warmed up in advance...

    make a large salad with spiralized zucchinis, and chopped tomato, mozzarella, and basil salad! I had that for tonight and it was delicious.

    You can easily cook a frittata on the stovetop (or grill!) instead of baking it in the oven--if you like that kind of dish, it sounds like a great option. I'm a vegetarian and made one just the other day. I used a combination of cherry tomatoes, fresh rosemary, garlic, lots of green onion, and some soy crumbles, poured beaten eggs over that, and cooked on the stovetop until almost set through, then topped with some cheese and cooked the rest of the way through with a lid (to melt cheese) on a lower heat. Served with some additional rosemary-garlic cherry tomatoes.

    Other good hot weather options: something like a tortellini salad (mix with spinach, tomatoes, pesto, cheese: done!), any bean-based dish (black bean + sweet potato tacos are a favorite with us), or even just some vegetarian sausages on rolls (Field Roast is an often much-liked brand) with a hearty cheese plate with vegetables, good cheeses, breads, fresh fruit, etc.

    Most of all: don't worry too much about it. The last thing your friends want is for you to feel stressed out. So make something that's easy on you and you're comfortable doing. Hope it goes well!

    Blackeyed pea salad

    Cook up some black-eyed peas or use canned. Rinse well and drain. Chop celery and carrot into 1/4 inch or smaller dice. Add to peas. Mix ranch dressing with red pepper flakes, black pepper and salt to taste. Toss the peas and veggies in the dressing. Chill and serve.

    Hmm... now I want to make this. :D

    I love homemade bruschetta. Can serve with toasted french bread, or if you are mixing a meat course with vegetarian options, can use the bruschetta to top some balsamic marinated chicken breast. Could also be a good optino for fritattas too!

    Curried Chickpea and Vegetable Stew

    2 [16 oz] cans chickpeas, rinsed and drained
    1 [14.5 oz] can diced tomatoes, undrained
    1/2 [16oz] package of frozen bell pepper and onions stir-fry
    1/4 cup water
    4 tsp curry powder
    1/2 tsp salt
    1/8 tsp black pepper
    1 [5 or 6 oz] package of fresh baby spinach

    Combine first 7 ingredients in a 4 quart slow cooker; stir well. Cover and cook on high for 3-1/2 hours. Add spinach; cover and cook 10 minutes or until spinach wilts. Serve.

    4 servings [1-1/4 cups]
    NI cal 218/fat 3.7/fiber 10.8

    This was very very good!!!! I served it with couscous that I made with chicken broth instead of water.

    P.S. A cucumber yogurt salad would be good with the curry flavors.

    Also made a lentil salad with roasted peppers and zucchini, red onion, and garlic; grilled halloumi cheese; sauteed baby potatoes topped with garlic, parsley, paprika; stewed tomatoes; and roasted eggplant with garlic.

    It was too much, lol, but also, apparently, a lot of meat eaters make too much for veggie friends because we all feel bad that they're not having steaks. Lesson learned!

    Broccoli salad with an Asian style dressing.
    Russian salad which is potato salad with carrot and peas.
    Roasted veggie salad which can also work equally well with veg done on the BBQ tossed in balsamic.
