Alfredo Lasagna with Turkey Bacon and Pepperoni
Hi,
I encourage my daughter to create meals she likes that are nutritious and calorie conscious. Today she created an easy recipe for Cheesy Alfredo Lasagna with Turkey Bacon and Pepperoni. Yield is 6 - 8 servings (@ 6 servings it's 338 calories per serving)
Ingredients:
1 box of No Boil Ready Lasagna Noodles
1/2 jar or 3.5 cups of RAGU Light Alfredo & Parmesan Cheese sauce
1 cup of Hood Low Fat cottage cheese
2 servings of Turkey Pepperoni (34 pieces)
6 slices of Oscar Mayer Turkey Bacon
1 TBSP Kraft Parmesan Cheese
1 tsp minced garlic
Adobo seasoning (to taste)
2 cups of water (flavored bouillon--optional).
Preheat oven to 375 degrees. Combine cottage cheese, garlic, Adobo, and grated Parmesan cheese and set aside. Add lasagna noodles in layers (3 pieces per layer). First layer is noodles topped with 1/2 the cottage cheese mix. Layer #2 is Alfredo cheese and 3 pieces of bacon torn into smaller pieces. Layer #2 is Alfredo cheese and 17 pieces of pepperoni. Layer #4 is the rest of the cottage cheese mix and 3 pieces of bacon torn into pieces. Layer #5 is Alfredo cheese and 17 pieces of pepperoni. Add 2 cups of water to bottom of lasagna pan. Cover the casserole pan tightly with 2 layers of aluminum foil. Bake for 55 minutes or until the noodles are fork tender.

Thank you so much for this delicious recipe. I made it Monday and it was so yummy. I was a little worried about the cottage cheese since i've never had it before, but it was awesome. I will def be making this again and again!0
