I woke up at 1 PM so I didn't get a breakfast, but now it's late and I'm 688 calories behind! The only problem is I'm actually pretty full. any ideas on what I can do?

Cheese, nuts, hiker's mix, peanut butter on toast.

if I truly wasn't hungry and had met my other nutritional targets, I'd probably have 2 or 3 good craft beers.

A day or two with a low calorie level probably isn't a big deal in the long run. You could balance it out by eating more tomorrow or eat a bit more throughout the week or save those calories for the weekend if you wanted to. But, if you need/want to reach your calorie goals today then I'd start packing in the calorie-dense foods. A homemade burger with cheese, avocado, bacon. Load up a salad with plenty of dressing, seeds, croutons, cheese, avocado, bacon, etc. Make yourself an ice cream sundae with hot fudge, whipped cream, and nuts. Get some peanut butter and a spoon (or put it on bread, apples, ice cream, etc)

I'd wait an hour or two and see if you get hungry again. It is only 6 PM.
9 PM rolls around and you feel like you could eat- maybe have a sandwich, fruit and a glass of milk.

I don't understand. You have 600 cals left for the whole day? Did you already eat dinner?

Gelato and Wine would be my go to's if it is 600 cals AFTER dinner. If not, I would just eat a nutrient dense dinner for 400-500 cals and still have a glass of wine.

ETA I see that you are only 18. If you are in the US, I do not recommend following my wine suggestion since you are underage.

You don't really NEED to eat if you aren't truly hungry, unless you can see yourself waking up in the middle of the night and demolishing the contents of the fridge. That said, someone brought these into the office tonight and I could easily put away 600 cals worth... https://www.specialtyfood.com/products/product/17399/jc-s-pie-bites-mint-chocolate-cookie/
