Mock Better Batter flour blend
** This can be used in any recipe that calls for All Purpose Flour. Usually the only adjustment that needs to be made is to double the liquid in the recipe you are using.
2 cups white rice flour
2 cups brown rice flour
1 cup tapioca flour
1 cup potato starch
1/4 cup potato flour
1/4 cup xanthan gum
1/8 cup pectin
Peanut Butter Cookies
1 cup peanut butter
1 cup brown sugar (you can use white)
1 large egg
Microwave PB a little so it’s easier to mix, add in sugar and egg. Bake at 350 degrees for 8-12 minutes. Let cool before removing from the pan – they will be soft while hot.
Elana's Chocolate Chip Brownies
1 (16) ounce jar salted almond butter, smooth roasted
2 eggs
1 ¼ cups agave nectar
1 tablespoon vanilla extract
½ cup cocoa powder
½ teaspoon celtic sea salt
1 teaspoon baking soda
1 cup Enjoy Life GF chocolate chips
In a large bowl, blend almond butter until smooth with a hand blender
Blend in eggs, then blend in agave and vanilla
Blend in cocoa, salt and baking soda, then fold in chocolate chips
Grease a 9 x 13 pyrex baking dish
Pour batter into dish
Bake at 325° for 35-40 minutes

HERSHEY'S "PERFECTLY CHOCOLATE" Chocolate Cake (Altered to be GF/CF)
Ingredients:
2 cups sugar
1-3/4 cups all-purpose flour - SUBSTITUTE BETTER BATTER FLOUR MIX (in my previous post)
3/4 cup HERSHEY'S Cocoa
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk - SUBSTITUTE 2 CUPS COCONUT OR ALMOND MILK
1/2 cup vegetable oil
2 teaspoons vanilla extract (USE McCORMICK's PURE EXTRACT)
1 cup boiling water
"PERFECTLY CHOCOLATE" CHOCOLATE FROSTING(recipe follows)
Directions:
1. Heat oven to 350°F. Grease and flour two 9-inch round baking pans.
2. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans.
3. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely. Frost with "PERFECTLY CHOCOLATE" CHOCOLATE FROSTING. 10 to 12 servings.
VARIATIONS:
ONE-PAN CAKE: Grease and flour 13x9x2-inch baking pan. Heat oven to 350° F. Pour batter into prepared pan. Bake 35 to 40 minutes. Cool completely. Frost.
THREE LAYER CAKE: Grease and flour three 8-inch round baking pans. Heat oven to 350°F. Pour batter into prepared pans. Bake 30 to 35 minutes. Cool 10 minutes; remove from pans to wire racks. Cool completely. Frost.
BUNDT CAKE: Grease and flour 12-cup Bundt pan. Heat oven to 350°F. Pour batter into prepared pan. Bake 50 to 55 minutes. Cool 15 minutes; remove from pan to wire rack. Cool completely. Frost.
CUPCAKES: Line muffin cups (2-1/2 inches in diameter) with paper bake cups. Heat oven to 350°F. Fill cups 2/3 full with batter. Bake 22 to 25 minutes. Cool completely. Frost. About 30 cupcakes.
"PERFECTLY CHOCOLATE" CHOCOLATE FROSTING
1/2 cup (1 stick) butter or margarine - I USE EARTH BALANCE CF MARGARINE (It's marked VEGAN)
2/3 cup HERSHEY'S Cocoa
3 cups powdered sugar
1/3 cup milk - SUBSTITUTE SAME AMOUNT COCONUT OR ALMOND MILK
1 teaspoon vanilla extract
Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency. Add small amount additional milk, if needed. Stir in vanilla. About 2 cups frosting.0 -
FYI - Many spices contain gluten, used as an anti-caking agent. McCormick's does not - in their single spices only - NOT the spice blends.
Many toothpastes also contain gluten, as a thickening agent. Tom's of Maine does not.0 -

Gluten Free Pantry makes an amazing brownie mix. I've gotten it at a bunch of grocery stores and even at Super Walmart. Also the Betty Crocker Gluten free mixes are really good to.
I've found with gluten free desserts, they can be grainy. But when you find good ones they are great.0 -
