One of my favourites is cauliflower bhaji.
Boil cauliflower in a cup full of vegetable stock and a teaspoon of turmeric for 15 minutes, so it still has a bite but you can break it up.
In a frying pan add a nob of oil or butter, a diced onion, chopped mushrooms, garlic and yellow mustard seeds. Fry them of for 5 minutes and add the broken up cauliflower (Which will be a lovely yellow colour) 25g of tomato puree and fry for a further 5 minutes. Serve with the meat or fish of your choice.0 -
