cookies! (and a question re: potato salad)

hi everyone! i'm looking for a recipe for sugar cookies (or any cookie that would hold up well with a cookie cutter) that doesn't contain about 12 sticks of butter and 5 lbs of sugar (an exaggeration, yes). i'd like to make some for a memorial day party this weekend.


also, potato salad recipes? i like the creamy kind, but don't want to put tons of mayo in. would plain greek yogurt work?

    I would have to say Greek Yogurt would work for the potato salad...and some mustard and celery yummo.

    I will root around in my recipes and see if I have any good cookie recipes. Does it HAVE to be cookie cutter? can't just be normal round baked cookies?

    it doesn't have to be cookie cutter, but i just got a set of 100 cookie cutters and i really wanted to use them...haha.

    Could you make Sugar Cookies - sugar free...with Splenda instead? Instead of butter, use margarine??? I'm not much of a baker but it seems like it could work.

    Instead of potato salad...another potato dish that is easy and delicious would be Rosemary Roasted Potatoes...all you need is a bag of red potatoes, olive oil, rosemary, sea salt and pepper. Coat the potatoes with the ingreadients and bake. Yum!

    I don't think you can completely forego the butter and sugar without foregoing the taste, so here's my mom's recipe:

    1 Egg, 2/3 Cups oleo (margarine), 1/2 Cup sugar, 1/2 teaspoon baking powder, 1 3/4 Cup flour, 1/2 teaspoon vanilla. Cream butter & sugar, add egg, mix well. Add vanilla, stir, add flour & baking powder & mix well. Roll out thin on table. Cut out. Heat oven to 40, bake for 8-10 minutes or brown to suit you. I probably bake at 375. It usually needs more flour before rolling or it'll be too sticky.

    There aren't that many ingredients, so even if you make them for everyone else and just have one, it's not a big loss :)
