Recipes for one?

Hi everybody! Does anybody have some healthy recipes specifically for one person? I've recently gotten out of a long term relationship and am realizing....I don't know how to cook for one person! I was always big on casseroles and big batches of pasta or whatever (which might have something to do with why I'm heavy now hmmm lol)
I'm planning on going to the grocery store tomorrow, and really have no idea what I'm going to get. Everything I know how to make doesn't really work for me anymore, and I'm not a big leftover eater.
Help? Any ideas? Thank you!

    you could keep cooking like you are used to, maybe make half recipes, and portion them out, and freeze some. i made a quiche way back in february, ate half over a few meals, and froze the rest in seperate servings. had a piece today for lunch, was so good, and i didn't have to do much except take it out the night before to thaw in the fridge, and then stick it in the microwave to heat it up.

    i cook mainly for myself only, but i just find it easier to make recipes that are for 4 or 6, it is just too handy to grab stuff from the freezer than for me to try and make something new each meal.

    but, you can always check on allrecipes.com, they allow you to adjust the servings the meal makes. and if the meal isn't the healthiest, it's not too hard to tinker with ingredients to make it healthier.

    I'm so with you on the cooking for one! I tend to go the baked fish/chicken and veggies route....which is easy. My fave dish right now, but a little bit higher in calories is an Italian Chicken Sausage with homemade sweet potato fries. Yum!!

    One thing I do that makes things a bit easier is that whenever I buy chicken breasts, I put them in individual baggies right away and then freeze them, so I don't have to worry about thawing the entire container. I also buy lean ground beef or turkey at the deli counter, and have them package it into separate 1 pound or half-pound packages.

    I also do a lot of freezing! The freezer is a busy single girl's best friend. I make recipes of normal size and then put into ziploc baggies and freeze them for when I don't have time to cook. Works with everything I've tried! :)

    Cooking for one person can be hard! I do it a lot during the week when my husband is at work and my son is at school, but sometimes I have trouble coming up with new ideas.

    I dont have the 200 under 200 but I think lots of those recipes are in the 300 book because there are many recipes under 200 in there as well!

    It's all about the leftovers, baby! Cook just like you'd always cook, but it'll last you longer! Ha!
