Cheesy Creamy Easy Chicken Enchiladas

I came up with this recipe today with the items I had on hand for enchiladas because I was craving them lol, and they tasted fantastic! So I wanted to share this recipe, hope you enjoy!
Serves 2 (2 enchiladas each):
4 corn tortillas
1 can of chicken breast in water (about 7oz drained)
tomato salsa, 3 tbs.
dry taco seasoning, 2 tsp.
fat free cream cheese, 2 oz.
1 laughing cow cheese wedge, light queso fresco & chipotle
canned black beans, 1/4 cup drained
shredded fat free cheddar cheese, 1/4 cup
enchilada sauce, 1/4 cup
green onions/black olives(optional)
Preheat oven to 375 degrees, spray a small casserole dish with cooking spray. Set aside.
Combine chicken, salsa, taco seasoning, cream cheese, LC cheese wedge, black beans in a saucepan, cook on medium heat until heated and cheeses have melted. Mix well.
Meanwhile, steam the tortillas in the microwave between two moist paper towels for 1 minute.
Fill each tortilla with chicken mixture and place in casserole dish, cover with the enchilada sauce and sprinkle cheddar cheese, onions/black olives(optional).
Cover with alluminum foil, Cook in the oven for 20 min., remove the foil and cook for an additional 10 mins, Remove from the oven, let sit for a few minutes, serve and enjoy!
Per Serving: 331g cals, 35g carbs, 5g fat, 36g protein, 5g fiber
I wanted to eat the whole entire thing but I had to save a serving for my boyfriend lol
