Apple Spice Muffins(with variations)

Makes 12 Bakes at 400 degrees for 20-26 minutes

in a large bowl combine the following with a pastry blender

1 1/4 cup all purpose flour
1/2 cup old fashioned oats crushed (I rub them between my palms)
2 tbsp + 1 tsp packed light brown sugar
3 tbsp granulated sugar
2 tsp baking powder
1/4 tsp salt
2 tsp ground cinnamon
1/4 tsp nutmeg
dash cloves

in another bowl combine the following

1 large egg (slightly beaten)
1 single serve cup of unsweetened apple sauce
1/4 cup olive oil (for the healthy fats)
3/4 cup milk (I use skim)
1 apple diced (I leave the skin on and prefer gala or cameo)

Add the wet ingredients all at once to the dry ingredients and stir just until combined (over mixing will cause the muffins to be tough) I spoon the batter by 1/3-1/2 cup fulls into muffin pans sprayed with PAM Baking Spray. Bake until a toothpick inserted in center comes out clean

Carrot Cake Variation omit apple sauce and apples add 1/4 tsp allspice and 1 cup finely shredded carrot

Morning Glory Variation same as corrot cake but add raisins and/or dried cranberries

Apple muffins prepared with skim milk and extra virgin olive oil one muffin contains

    Mmmmm....

    I'd probably do some whole wheat flour for more health benefits, but these sound good!

    posted a thread for carrot cake pancakes and you can make apple spice pancakes with that just omit the carrot and allspice and add diced apple

    That's funny I was just putting together the dry ingredients for Saturday mornings blueberry oat and spice muffins and was going to use whole wheat four but still had an open bag of white stuff in the cabinet and can't bring myself to waste it...

    Also, to reduce the sugar and calories in my recipes I have been using 1/2 the amount of sugar and then half of that (1/4) in granulated splenda, once the splenda is gone I will be trying it with truvia ;^)

    update, I have reduced the oil in all my recipes down to 1/2 tbsp and use 1 1/2 - 2 tbsp unsweetened apple sauce in its place, I have also rduced the milk to 1 cup and for the remained use water. Enjoy!
