I like to spread em with nutella, top with banana and either bake em or deep fry them if you're feeling naughty ;)

I like cucumbers, mint, scallions, carrots, very thin unseasoned pork, with rice vermicelli noodles as a filler

If talking about egg roll wrappers. I have made crisps with them. Just brush with a little healthy oil with a drop or two of sesame oil, a few sesame seeds and bake. I have seen them wrapped around shrimp with the tail sticking out them baked or fried. I have made Rachael Ray's Cheeseburger eggrolls. I have seen people line cupcake pans with wraps and bake then fill. I have also seen people use them in place of pasta.

Rice noodles, spinach, carrots, green onion, cilantro, basil, shrimp, water chestnuts. That's my go to when we make spring rolls.

You could use them as dumpling wraps and fill them with minced pork, garlic & ginger.
