vegetarian meals for meat-eaters!

I'm going back to stay with my family for the summer tomorrow....until September!!!! my meatloving family accepts my new-found vegetarianism (almost 3 months) though they aren't very creative or healthy when it comes to veg cooking - they aren't at the best of times. i'm happy to cook for my family too but i'm only used to cooking for one.

any ideas for family meals that are vegetarian or can be quickly adapted would be very useful.

by the way, i eat fish, eggs and dairy, and a protein source is ESSENTIAL to me.

    well since you don't eat chicken... make a blackened fish and i love steamed rice topped with black beans.... i usually make it with chicken though :)

    I am not vegetarian (Itried for 3 years and got really pale and run down... just not for some of us I guess) but most people love anything with black beans :)

    We have similar diets. People consider me vegetarian because I don't eat red meat, pork, or chicken but strict vegetarians often turn up their noses at me because I do eat seafood. So when asked I just tell people I'm "Pescatarian".

    I've been living this way for 17 years. No one in family including my husband restricts their diets the way I have and over the years they've gotten used to it.     Other things that have worked well for me and the meat eaters in my family:
    - Tacos (I make potato tacos while the others have ground beef)
    - Pasta loaded with veggies, garlic toast on the side
    - Fish as an entree
    - Veggie Stir-fry (include tofu) w/ Brown Rice

    Or other things I've done is make the same dish for both such as one of the above listed then cooked some grilled chicken breast separately for the meat eaters to add to theirs.

    i am veggie and so is my daughter. when she goes to mates houses the parents panic and i just point out that most food is veggie until you add the meat!

    for example when you make a pizza is just tomato & cheeze (so make half with no meat topping on it), when you make pasta its just pasta and tomato sauce (so put some to one side for the veggie and add whatever they want to the meat side), stir frys are mainly veg (cook most of it and then split before adding the meat), all of a roast dinner is veg accept the meat (so just add a soya or quorn product to the veggies meal) and so on. that way people get their head around making some of the meal non-meat for the veggie's! i hope that helps!

    I've been Pescatarian for 3 years with family who is Omni, and that is exactly what I do--separate out the meat. Tonight we'll have chicken enchiladas, but I'll make my enchiladas with black beans. We make spaghetti with meat on the side, add your own. If they have burgers, I have a veggie burger. Etc. It's really not that difficult with a little planning. Good luck!
