If you prepare your meal in advance for the week.. how to store yams?

For those that do meal prep for the week.. if I bake a bunch of yams for the week. How can I store them? Will they stay fresh when cooked in the fridge for 7 days? Or should I freeze a portion of them ?

If freezing whats the safest/best way to defrost. Thanks. (I'm new at meal prepping)

    Hey! I have found that the best way to store yams, once cooked, is to slice them into rounds and layer them in a container with wax paper between each layer. This helps absorb the inevitable condensation so that they don't go bad as quickly. Mine tend to last about 5 days this way but I've found a good rule of thumb is to put 2/3 of what you cook in the fridge and 1/3 in the freezer for later in the week, just be ready for them to be a bit squishy after defrosting if they're baked!     although you're trying to cook less during the week a yam takes only a few minutes to microwave. You can put it on before you change clothes after work and it will be done in a jiffy
