has anyone or is anyone a veggie! I need more fun and nutritional meals which are steal low cost! Thanks guys :)

    Vegetarian here... A recent favorite of mine: pre-baked eggplant (low calories, very versatile, inexpensive) in yogurt. Here an example from my diary: This is not a huge filling meal, but rather tasty. I used it as a snack.

    Eggplant, raw, 179 g : 45 11 0 2 4 6
    Onions, raw, 156 g: 62 15 0 2 6 7
    Garlic, raw, 3 g: 4 1 0 0 1 0
    Butter, without salt, 6 g(s): 43 0 5 0 1 0
    Tomatoes - Raw, 170 g: 29 6 0 1 23 3
    Whole Milk Yogurt, 4.3 fluid ounce: 86 8 4 5 70 7

    kcal: 269 carbs: 39 fat: 9 protein: 10 Sodium: 104 Sugar 23


    Slice eggplants, bake in oven until somewhat brownish/tender, not too crisp. In the meantime, chop onions and garlic, fry onions and garlic in some butter (use less than 6g to reduce kcal) in a frying pan, add chopped tomatoes, some spices to taste. I used salt (which of course ups the sodium count, so you will have to add that if you care), chili powder, and rosemary. Cover and make sure things don't get burned. Add pre-baked eggplant slices and some water, if you like (I prefer to use very little if at all, mainly to reduce the chance of things getting burned). Cover, let it simmer for a while, until eggplant is ready. Fill content of pan into a bowl, add yogurt, stir, enjoy.

    1 can Garbanzo beans, 1 bag of frsh brussel sprouts, 1 onion, 1 tablespoon thyme, 1 vegi bullion,...put brussel sprouts in about 1/2 - 1 cp water....turn on high....add bullion.....before the brussel sprouts are done add onion, thyme and beans. Quick and cheap....sometimes we add a few olives (black or kalamata) and sometimes a few cashews.

    Can't beat veggie chilly, great for using up whats left in fridges ens of week. Through in some extra beans for protein.

    I've been making this a lot lately - Tomato dal (I don't use ghee, coconut oil works for me). This recipe is adding flavor to my vegetarian ways!
