Odd but Yummy Sweet Potato

I wanted to try something new on top of my sweet potato and since I was eating it as a meal I wanted some protein........

I heated up the potato and put one wedge of Laughing Cow Light Swiss Cheese on it then topped with one cup of black beans with cajun seasoning on them.

Sweet, Creamy, and a little Spicy!

    Essentially cook it like you would a regular baking potato.

    This does sound interesting, I have some cooked pinto beans sitting in the fridge at home, so I may have to make my own version.
  • Can it be mashed like regular potato?

    You can mash them! They are wonderful. It takes longer to cook sweet potatoes than white potatoes. I think the best way to mash would be to probably bake them. Then the skin peels right off and just mash. But Idk i've never mashed them. I assume you could boil them too. They are great with butter and cinnamon and sugar. But you can skip the toppings altogether and they are still delicious!

    they are delicious baked, but when fully cooked they will "leak" syrup (not added - their own natural "juice") so put them on a pan or wrap in foil.
    Also, since they take a little longer to cook than white potatoes, if they're not done when your other oven food is ready, you can microwave them for the last few minutes. But I don't recommend microwaving for the only cooking method - they come out a bit rubbery.
    They have more resistant starch than a white potato and taste better with nothing added. They are already moist so don't need to add butter or sour cream.
