Breakfast Quesadilla w/Avocado *309 Calories*

Hello all! I completely just woke up this morning with a wonderful idea! Egg & Cheese Quesadilla with a side of Avocado (if you want the avocado)! It is soo simple to make! Here is the recipe:

1 whole wheat tortilla (recommend Jospeh's - Flax, Oat Bran & Whole Wheat Flour Tortillas 70 cals)
1 whole egg, large
2 TBSP of part-skim mozzarella shredded cheese
2 TBSP of small yellow onion, sauteed
1/4 TBSP olive oil
1/2 small Avocado
Directions:
1. Chop onions and sautee in olive oil in small sauce pan for 3-5 minutes.
2. Mix egg in a bowl, and add to sauteed onion.
3. Add egg mixture and cheese to whole wheat tortilla.
4. Fold tortilla in half (like a quesadilla) and add to sauce pan, holding it down with spatula and flipping over until golden brown. If you have a GEORGE FOREMAN, or something like it, add tortilla to the small grill and hold down for one minute. (In the picture, i used George Foreman grill.)

Suggested ideas: Use egg whites instead of whole egg to save on 40-50 calories. If you do not want the avocado, it will be 205 calories!

I made Bfast burritos this morning, Next time I will definitely be tring a quesadilla...but with turkey sausage and the santa fe cooking creme....

I need to make this. I used to love the WW Smart Ones Breakfast Quesadillas but now I don't eat them as I'm going all natural-esque. I don't know why it didn't occur to me to just make one myself. Thanks!0
