I have problems deciding what I want to eat for lunch everyday.
I'm getting bored with salads, I need a recipe for something exciting!

This is what I just ate (and you can put any combo of stuff on it):

Lettuce - Green leaf, raw, 1 leaf inner 1 calorie
Kraft Fat-Free Singles - American Cheese Slice, 1 slice 25 calories
Ole Mexican Foods - Xtreme Wellness/High Fiber Low Carb Tortilla Wraps, 1 tortilla 71 calories
Tyson - Grilled & Ready Oven Roasted Chicken Breast, Diced, 3 oz 110 calories
Walmart - Pico De Gallo - Fresh (Tomato, Onion, Cilantro, etc), 0.25 cup 15 calories
    Hellman's - Light Mayo, 0.5 Tbsp 18 calories

    Total of 240 calories
It filled me up and it was yummy :)
You can probably do without the mayo and cheese. Pico De Gallo is a great flavorful topping all by itself :)

If you like fish, this is pretty good... my own creation, finally all those years cooking in restaurants are paying off

    6oz Mahi Mahi fillet
    3 oz pineapple
    1/2 Serrano pepper (de-seeded)
    1/5 of a white onion
    2 tablespoons lime juice

Combine everything but the fish in a food processor and blend down to a minced consistency. Grill the Mahi Mahi with a little lime juice and pepper, cover with the pineapple salsa, and enjoy. You can make it the night before, just reheat the fish for lunch.
