Low Cal almost no fat Recipe: Shrimp Stuffed Potatoes
Shrimp Stuffed Potatoes
Ingredients
16-18 Shrimp 16-20ct
1/2 cup white cooking wine
4 medium russet potatoes
1 tablespoon old bay seasoning
1 tablespoon paprika
1 large yellow onion diced (or use 1/2 cup diced scallions)
2 cups fat free shredded cheddar
1 cup fat free sour cream
Directions
Bake potatoes in oven for an hour on 425 degrees. Saute shrimp in white wine and seasonings. Take potatoes and spoon out the inside into a mixing bowl. Place potato skins on baking sheet and rebake in broiler for about 5-10 minutes or until a little crispy. Dice up the cooked shrimp and place in mixing bowl with potato. Mix in onion,1 cup shredded cheddar, and 1 cup sour cream and mix well. Stuff mixture into potato shells and top with a 1/4 cup shredded cheddar. Bake in oven on 425 for about 15 minutes or in broiler for 5 minutes or until golden bubbly brown on top. Top with sour cream if needed or optional add in crumbled bacon but this will add more calories obviously!
Makes 4 servings.
About 400 calories only about 2-3 grams of fat no saturated fat! very filling you won't feel deprived.
