What is wrong here

So I have been working hard at getting back in shape after breaking up with a girlfriend. 2 Months ago I was sitting at 235. I eat 1900 or less calories a day, according to calorie burning calculators I am burning 4500 calories a day.
I head been dropping pretty steadily to the point where my scale said I was at 207 last Thursday, Friday and Saturday.
Monday it jumped back up to 215.5 and I have be unable to get it to go back down. I have been eating exactly the same and exercising exactly the same.

That jump back up, for seemingly no reason, is frustrating. Anyone know why it would happen? I understand water and food fluctuation is a thing. I always weigh first thing in the morning, no clothes after taking a leak, but to be consistently at 207 for 3 days and then jump up 9 pounds and be stuck there doesn't seem like fluctuation.

    Burning 4500 calories per day... is that your normal calorie burn just from living and breathing plus exercise? How are you quantifying that? I burn 1600-1800 daily with running and weight lifting (but I'm a 49 year old, 132 pound female) so I'm having a hard time wrapping my head around that many calories being burnt every single day. My first thought when I started reading was that you simply needed to adjust for your weight loss. If you are doing the same things now that you were when you weighed 235 you wouldn't be burning as many calories doing them.

    Obviously, a large weight gain in two days is water. I've gained that much water and more over a similar time period but I was able to lose it again after a few days. I'm sure you'll be able to shake yours, too, as it's only been a couple of days. What did you do on Sunday? Did you eat a lot of high sodium foods? Did you do a new activity?

    That 4500 burned is a number a calorie burning calculator gave me that includes all of my exercise, as well as other activities like showering, taking care of kids, sleeping, etc, etc. So it's everything. I have been ramping up as well. I ride my bike 10 miles in 30 minutes where a couple weeks ago I could only do 7. The amount of weight I lift in my routine is about 60% more than it was a couple weeks ago.

    The only thing I did different on Sunday was skip my regular weight routine (still rode my bike 10 miles) because I spent the day with my sister and her kids but I ran around chasing a kite with them. Lifted 35 to 95 lb kids over my head and threw them on a giant pillow for nearly an hour non-stop. I figure that it was a sufficient workout replacement. I ate 2 bunless hot dogs and pile of carrots with no dressing instead of my usual 3 fried eggs, pineapple and green beans for dinner. No huge difference.
