Healthy Banana Choc. Chip Muffins
My friend emailed me this recipe. I made them today and they are delicious and moist! So good:)
1 1/4 C mashed ripe bananas (about 2med.)
2/3 C honey
3 Tbl non fat yogurt
3Tbl unsweetened applesauce
2Lg egg whites
1 Tsp vanilla
1C + 2Tbl whole wheat flour
3/4C whole grain oat flour (see below) **
1/2 Tsp baking soda
1/2 Tsp kosher salt
1/2 Tsp cinnamon
1/4C mini Choc. Chips
Preheat oven @ 375
Line muffin tin with papers and a spray of non-stick spray
Mix wet ingredients together
Mix dry ingredients together ( both in separate bowls)
Gradually add dry mix to the wet. Don't over stir
Fill cups and sprinkle each muffin with choc. Chips.
Bake 12-16 min. MAKES 12
*** if you don't have the oat flour, you can grind oatmeal oats till powder form, then measure out 3/4C.. I used my Magic Bullet and it worked awesome!!!!
Each muffin: 164 cal. 2.2g fat. 0 cholesterol. 35.7g carbs. 214mg sodium. 2.4g fibre. 21.3 g. Sugar. 3.2g protein
