My Bon Appetit cookbook has a chocolate zucchini cake recipe which I do not see on the website but you can probably just add 1.5 cups of grated zucchini to any regular chocolate cake recipe. Bake when I baked from boxes, I added it to boxed cake mix. The cake will be moist and yummy and no one will know it contains a vegetable

Zucchini and Shrimp Stir-Fry RecipeServes 2-3 | Prep Time: 15 Minutes | Cook Time: 5 Minutes

Ingredients:1 1/2 tablespoons oil
8 oz shelled and deveined shrimp or chicken breast (cut into pieces)
1 zucchini, about 8 oz, cut into rounds and then quarters
3-4 button mushrooms, cut into pieces
3-4 baby carrots, sliced
5-6 slices peeled ginger
Brown Sauce:
1 tablespoon oyster sauce
5 tablespoons water
1 teaspoon sugar
1/2 teaspoon sesame oil
Pinch of salt, or to taste


Method: Mix all the ingredients in the Brown Sauce, stir well and set aside.
Heat up your pan/skillet/wok and add the oil. When the oil is heated, add the ginger and stir-fry until aromatic, follow by the shrimp. Stir-fry the shrimp until the surface turns opaque, then add in the zucchini, carrots, and mushrooms.
Toss and stir-fry for about 30 seconds.
Add the Brown Sauce (stir right before using), stir to combine well with the ingredients. Once the sauce thickens, dish out and serve immediately with steamed rice.
Cook’s Note: If you don’t have Sesame Oil, it’s OK to skip. Oyster Sauce is a must when it comes to Chinese or Asian stir-fry.


This is a family favorite

I LOVE grilled zucchini--just made kebabs and used chicken, zucchini, bell pepper, sweet onion. Sometimes I throw baby potatoes on there too. Delicious and fairly healthy.

Also works well in stir fries, baked/roasted, raw in salads or as zoodles, and of course my favorite: zucchini bread.

I LOVE ZUCCHINI! It's my most favorite vegetable! LOL. I put it in everything and anything - pasta sauce, stir-fry, omelettes, fried rice... I also love it just sauteed with a bit of garlic...

I made this last night (she mixes half zucchini noodles and spaghetti, but I did all zucchini). I just got a julienne peeler and was excited to come close to spiralizing something, lol. It was very good and I have some extra pesto leftover to use for another meal.

Someone already posted Stuffed Zucchini Boats. I made them just last night for the first time. Really delicious, even my picky hubby said he would eat again. I can't wait for lunch.....leftovers.....
