Scallop Recipes Anyone!

Can anyone recommend any recipes for scallops? I'd prefer not to have them with pasta, any recommendations much appreciated!

    Mmm, love scallops! I've only ever had them in restaurants before but have just bought some - I was planning on making a starter with a small portion of saffron risotto each in the shell, and topped with the scallop - not quite sure how ill do those yet, probably something simple like quickly cooked with squeezed lemon and a little chilli. No idea how it'll turn out, but worth a try! :)

    Ditto. Great over pasta but since you prefer not, just add them to field greens, parmesan and your fav vegetables. YUM

    I like to pan fry them with garlic, a tiny bit of butter, and prawns. Serve them up with some steamed veggies, and you're good to go.

    These Scallop Burgers are FANTASTIC!

    Scallop Burgers – from Rachael Ray 365: No Repeats (recipe #181) – makes 4
    1 1/2 pounds large seas scallops, patted dry
    1 large shallot, finely chopped
    1/4 cup fresh flat leaf parsley, chopped
    3 Tbsp chopped fresh chives
    2 tsp Ol Bay Seasoning or other seafood seasing blend
    coarse salt and coars pepper
    Extra virgin olive oil
    Juice of 1/2 lemon
    Romaine lettuce leaves
    1/2 red onion, very thinly sliced
    1 naval orange, pith and peel removed, sliced into thin disks
    Zest of 1 orange (zest before peeling and slicing)
    4 crusty rolls, splot and toasted

    Place scallops in food processor and pulse to coarsely grind the scallops, then transfer to a bowl.Mix with the shallots, parsley, orange zest, chives, Old Bay, salt, pepper, and a drizzle of olive oil. Mix and form patties 3/4 to 1 inch thick.

    Cook in a hot nonstick pan over medium-high heat for 3 minutes on each side, or until just firm but with a bit of give left. The patties should be evenly carmelized on both sides.

    Char the buns under the broiler and drizzle with olive oil. Place the burgers on the bottoms of the buns and top with lettuce, onions, and oranges.

    I have many scallop pasta recipes of my own, but since you do not want pasta here's a super tasty recipe.

    ^The recipe calls for 2lbs bay scallops, but I use sea scallops. Either work. I do not use the Pernod, I use fresh tarragon - somewhat same flavor, but not as strong. I put in one big baking dish and not individual.

    It's extremely good. Easy - it's baked. You can make it ahead and leave it in the fridge until you are ready to pop in oven.

    Scallops are delicious and delicate. You really don't need to do much besides sauteed in butter, garlic, and lemon, but this is a really great (looks impressive) baked option.

    Scallops are awesome in pesto as well.

    Yes. Simple is best with scallops. Gently gently pan sear with some butter or an oil/butter mix with a little garlic, salt, pepper and lemon. Be careful not to over cook.

    I just made ceviche with them earlier this week. Poach them the night before for 2-3 minutes, soak with lemon juice over night. Toss with garlic oil, tomatoes, and extra lemon if you want. We ate it on a bed of spinach with feta, no dressing needed. Low cal, high protein and pretty simple.
