SUPA MOIST 110-155 Calorie Microwave Protein Fudge Muffins

This is a recipe from smoothiegirleatstoo, who is a GENIUS by the way. I've posted another one of her recipes so here's another stunner.

Nutritional info using her ingredients: 155 calories **; 12 g protein; 16.5g carb; 4.5g fiber; 1.75g fat Stellar stats.

Ingredients:

* 2 Egg whites (**If using liquid egg whites use 1/2 cup and add 20 calories)
* 1/4 cup pumpkin (3 T applesauce works well too!)
* 2 T coconut flour* (1 T also works, and results in 40 fewer calories)
* 1/2 tsp baking powder
* stevia or other granular sweetener to taste
* 1 T. cocoa powder (Hershey's Special dark cocoa is best!)

1. Mix ingredients well with fork, whisk or spatula
2. Microwave for 2:30-4+ min on High (depends on your microwave, altitude and the whim of the cupcake gods.)

I don't have coconut flour so these are the stats when I make it.

Now I have made these with 1 whole egg instead of 2 egg whites before when I wanted the extra calories and they do not taste as nice. Personal preference, maybe? :) These are fab drizzled with peanut butter or another nut butter of choice. Also good with berries. This is my go to recipe if I want more protein... and it's delicious. It is GIGANTIC so throw em in your bag for later, if you can hold out for that long. Go nuts!

You can also bake these babies. They'll get an awesome crust but I prefer the microwaved version myself.

    Looks delicious is spelt flour plain or self raising? and when do you know that they are cooked? x

    Spelt flour is plain, so I add the required baking soda for it ;). How do you know? They'll rise incredibly high and I usually take it out after 2.30-3, depending on if I want it a bit dryer or not.

    That's awesome.

    I keep seeing recipes on here for 100 calorie deserts but the recipes make like a dozen which doesn't really do me any good. I'd eat the whole pan.

    I love these microwave recipes for just one serving of something.

    This looks so good!! do you know if i can use just normal plain flour instead?
