Speedy Chickpea Curry

Here's a great recipe for a quick and easy (and storecupboard for me) veggie curry for when you're short of time.

Chickpea & Spinach Curry
(Serves 2)

Around 288 calories per serving (depending on weight of onion and amount of spinach)

Ingredients
- Can of Chickpeas, drained
- Tinned Cherry Tomatoes (can use chopped plum tomatoes instead)
- 1 large onion
- Bag of Spinach (as much as you like, I get the 260g bags, it does shrink down a lot)
- 100g Curry Paste (personal preference for me is a Balti)

Method

- couple of sprays of fry light in a large frying pan.
- Soften the onions for a few minutes
- Add the curry paste, mix and allow to cool out for 2 minutes
- Add the drained chickpeas and tomatoes and simmer until the sauce thickens to how you like it (8 mins for me!)
- Take off the heat and stir through the spinach to wilt it

Serve on its own or with some rice if you'd like!

    Let me know how it goes. I found it online a while back, decided to give it a go and now it's one of my favourites.
