Got this idea when asking for eggplant recipes a couple days ago, and it turned out really well.

1 medium eggplant (mine turned out 504g)
1/2 pound lean ground beef (I used 92%)
1 onion
8oz tomato sauce
Oregano
Feta and parmesan, to taste (I used 7g of parmesan and 16g of feta)
Olive oil spray

Preheat oven to 450, spray a sheet with cooking spray. Slice eggplant in 1/2 inch slices, put slices on sheet, spray again with oil, salt and pepper, and cook for 8 minutes. Turn over and cook for 8 more minutes.

In the meantime, brown the beef and onions. Add tomato sauce, oregano, salt and pepper and let simmer for 10 minutes.

Take a loaf pan, and layer slices of eggplant with meat sauce. Sprinkle cheese on top. Lower oven to 350 and bake for 10 minutes.

Makes two servings, each serving is 363 calories, 30g carbs, 17g fat and 27g protein (I accounted for 2 teaspoons of oil from the spray). Or you can be like me and eat the whole thing.
