You can make it into noodles with a julienne peeler or spiraliser and use in place of spaghetti/noodles
I chop it up and add to stir fry, pasta sauce, risotto, stew, casserole anything really.
Or cut length ways, scoop out seeds and fill with couscous or something and bake for stuffed.0 -

Zucchini and Shrimp Stir-Fry RecipeServes 2-3 | Prep Time: 15 Minutes | Cook Time: 5 Minutes
Ingredients:1 1/2 tablespoons oil
8 oz shelled and deveined shrimp or chicken breast (cut into pieces)
1 zucchini, about 8 oz, cut into rounds and then quarters
3-4 button mushrooms, cut into pieces
3-4 baby carrots, sliced
5-6 slices peeled ginger
Brown Sauce:
1 tablespoon oyster sauce
5 tablespoons water
1 teaspoon sugar
1/2 teaspoon sesame oil
Pinch of salt, or to taste
Method: Mix all the ingredients in the Brown Sauce, stir well and set aside.
Heat up your pan/skillet/wok and add the oil. When the oil is heated, add the ginger and stir-fry until aromatic, follow by the shrimp. Stir-fry the shrimp until the surface turns opaque, then add in the zucchini, carrots, and mushrooms.
Toss and stir-fry for about 30 seconds.
Add the Brown Sauce (stir right before using), stir to combine well with the ingredients. Once the sauce thickens, dish out and serve immediately with steamed rice.
Cook’s Note: If you don’t have Sesame Oil, it’s OK to skip. Oyster Sauce is a must when it comes to Chinese or Asian stir-fry.

I LOVE grilled zucchini--just made kebabs and used chicken, zucchini, bell pepper, sweet onion. Sometimes I throw baby potatoes on there too. Delicious and fairly healthy.
Also works well in stir fries, baked/roasted, raw in salads or as zoodles, and of course my favorite: zucchini bread.0 -

you can also look for ratatouille - french dish that among other ingredients has zucchini.
another option is cut zucchini lengthwise, scoop out the middle and leave the shell like a boat. fill it with grounded meat. I will leave the "pick a meat" to your taste and imagination. the middle can be cubed and used in a soup.0 -

Zucchini turkey burgers!! Great to make a few and freeze a few between freezer paper. Such a good back up meal so I can just pull one out of the freezer and stick it on a pan with some pam.

I've made these baked parmesan zucchini rounds multiple times the past couple weeks. SO easy and they taste amazing. Slice zucchini, top with parmesan cheese, put in the oven. Can't beat that!
