    OH, I love skinnytaste! I also use the Clean Eating cookbooks. They're flavorful and healthy!

    I am playing with broccoli salads this week (first one was awesome: raw broc, apple, grated carrot, a few sultanas and walnuts, dressing = low fat mayo, sour cream, lemon juice and a bit of sugar) and adding various things to buckwheat (for breaky = grated apple and sultana, for dinner = leek and mushroom with some chicken stock and small amt low fat sour cream)

    I also made up my own pizza pockets (aka baked piroshki or close to mini calzones - all essentially a similar idea) using bread machine dough and various combinations of fillings (went for some eastern european combos first up with leek, mushroom, dill and sour cream and then a meat one w beef, carrot, onion, dill - later going to try more the classic style with a bit of ham, loads of veggies, bit of cheese - obv the combinations are endless here!) - they are easy to make and so tasty! I used a wholemeal bread mix for the outside :) serve with a nice salad

    WOW, that site is a GREAT find!!! Thanks so much! That Kofta looks FABULOUS, and my boys love to eat anything on a stick, lol.

    The broccoli salad is a good idea, too. I totally forgot I bought broccoli slaw mix at TJ's on Friday!

    We have Tuesday: Very SLoppy Joes with shrooms, Wed: Blueberry mango mahi mahi, Thurs: Pesto Resistance, Fri: Enchilada LAgsana, and Saturday: bison burgers with spicy oven fries and grilled pinapple. Its all under 500 calories, lean, light, and yummy!

    I still have a TON of asparagus to use, so I'll mainly be whipping up stuffed chicken breasts. Asparagus, low cal cheese, roasted red pepper and baby spinach baked in the oven. NUMMMM~
    Last time I calculated it out, it's under 300 cals per breast.
