zucchini and egg plant low sodium recipes

yes. furbuster and anseelye posted not too long ago a topic about zucchini.

bugger. I was hoping to find some tried and trusted eggplant recipes on mfp too. I like them, I just don't know what to do with them. Yes I googled how to cook eggplant, but they just don't look like the wonderfully char-marked pictures.... Oh well, keep trolling
