Freezable Recipes

Hi everyone! I live ten miles from the nearest grocery store. That isn't a lot, but it's too much for me to afford driving there everyday. I find that a lot of recipes call for perishable items like fresh fruit, veggies, and so on, so I have to buy them and use them quickly. I also find that lots of recipes are meant for families, but it's just my daughter and I right now and I sometimes fix her something separate anyway. I know I can always eat leftovers the next day and plan my meals way ahead of time to avoid these problems, but still... I'm looking for freezable recipes. It would make my life so much easier! I can make a big batch of something, freeze it, and defrost/reheat it whenever I want it next.

So, do you guys know of any freezable recipes? Which are your favorites? I'm just now getting into them, so my list is a little short. I have a few I'm going to try freezing tomorrow from Skinnytaste. I don't know how well that'll go, but we'll see.

    Soup is really good for freezing, I made spinach and ricotta pasta rolls, they freeze well (I reheat them in the microwave with a container over them to steam them so they're all soft), things like curries, and stirfry meals are also really good to freeze, you can either freeze them with rice, or without. Or casseroles.

    Have a look at skinnytaste.com, a lot of her meals can be frozen :)

    any kind of soup should freeze well as should most chili or stews. I don't generally freeze cooked dishes beyond that, but I do freeze ingredients. I plan my meals so I know if I am having chicken breast next Friday, I shop Sunday and freeze the chicken breasts. You just have to make a note to self somewhere that you always see to remind you to take them out of the freezer on wed evening and put them in the fridge to thaw.

    One note on freezing, if you use baggies to freeze stuff get the freezer bags. They are a bit more expensive, but they are not porous like other bags. The cheaper bags allow water vapor in which will freeze inside the bag on the food and you can get things like freezer burn and/or flavors mixing from one food to another.

    I cook soup, stew, chili, stuffed peppers and freeze them in individual portions as well as flash freeze (directly on a cookie sheet) casseroles, meatballs, nuggets, burritos and some sauces in jars or ice cube trays.

    I make apple sauce (peel/core a huge bag of apples, throw in crock pot, add a tiny bit of all spice if you want) Keep on low over night. When done let it cool off, mash with potato masher or blend in blender ( do not blend when hot! The steam will build up in the blender). You can add it to oatmeal, recipes, or just eat it by itself. Freezes for about 3 months.

    You can add other fruits to it if you want like raspberries or peaches.

    @amberlicea Oh. My. Stars. How creative! I love broccoli and cheese. I'm definitely going to give that recipe a shot.

    @SimoneBee12 I love pasta and soup! I wasn't sure how well pasta would freeze before your post, so that's certiainly helpful.

    @Steve_ApexNC Yes, that's my problem. I am terrible at planning ahead, but I'm getting a little better every day. That tip on the freezer bags is extremely helpful! I didn't honestly know there was a real difference between the two. I'll make sure to buy some on my next trip to the store.

    @Queenmunchy Now something I hadn't heard of was freezing sauces in ice cube trays. I guess that would make it a lot easier to measure frozen portions! I don't have a food scale yet, so I'm living on the measuring-cup-and-overestimating-portions diet.

    @MsJulesRenee Oh, my daughter and I love fruit! She has trouble chewing it since three of her front teeth are out right now, so applesauce would actually be fantastic. I think that'll be my project tomorrow! I can mix in some bananas and strawberries and I'm sure she'll eat it right up

    Pesto or cheese sauce (I make a cauliflower cheese sauce for my daughter) are best in cubes - really anything that you use in small amounts, even leftover coconut milk or tomato paste.
    Things like marinara, enchilada, or bbq sauce are better frozen in jars since you'd use more than just a cube or two at a time.
