I rarely if ever eat beans and when I do its usually in my chili or its vegitarian baked beans(which are high carb and high sugar.) Anyways, I was wondering how I could incorperate beans into my diet?

    Do you make tacos? Add black beans to the meat! I just made a variation on this tonight & it is yummy! Hummus is made with garbanzo beans & it a great dip for veggies, too!:flowerforyou:

    I think beans are good in...

    -salad
    -soup
    -burritos
    -black bean salsa (yum)
    -you can make some nachos with cheese, beans, and salsa on top

    You can also use them in 3 bean salad, which I'm sure, if it's home made, is way better than canned or jared.

    I used to make a skillet dinner with rice, corn, beans, and diced chicken breast with a dollop of fat free sour cream and a tablespoon of chili powder.

    Also, you can make some red beans and rice (ala Popeyes), I'm sure there's a lower-fat recipe out there somewhere.

    garbonzo beans can baked. If using canned ones rinse then dry. Mix with just enough oil to coat. Sprinkle with some seasoning. I like alittle spicy so some Essence of Emeril (make your own)
    Spread out on baking sheet and bake at 400F for about 25 min.
    These make a crunchy snack or throw them into salad intsead of croutons.

  • We have been undergoing a bean infusion in our household. Beans have a tremendous amount of fiber which is so good for you. After trying 1 can of every kind of bean out there, I personally like the small red beans. I like to make a taco salad and use the red beans in place of meat or chicken. Lettuce, tomatoes, a few tostitos crushed up, beans, salsa and a little sour cream can make a really good meal.

    you have to take the recipe and add your own flavor. I like the white bean more than chick peas. it is so simple...

    Ingredients

    2 cups white beans, canned, drained and rinsed
    1/4 cup tahini (this is in the kosher area of the market)
    1/4 cup lemon juice
    2 teaspoons garlic, minced
    1 teaspoon cumin powder
    dash cayenne
    2 ounces extra-virgin olive oil
    warm water

    Method
    Combine beans, tahini, lemon juice, garlic, cumin, and cayenne in the food processor. Blend and gradually add oil and warm water until the mixture has a creamy consistency. Refrigerate overnight for the best flavor.

    Serving Ideas - Serve with warm pita triangles.

    Ingredients:
    1 15 oz can of chickpeas or garbanzo beans, drained (save liquid)
    1-2 cloves garlic, crushed
    1 tablespoon lemon juice
    1 tablespoon tahini, or low fat peanut butter if you prefer (optional, but if you do not use, increase yogurt by 1 TBLS
    1/2 cup plain yogurt
    1 teaspoon salt
    Preparation:
    In a food processor combine beans, tahini (if desired), yogurt, garlic, and lemon juice. Blend well. Add salt and cumin and blend to a smooth and creamy dip.

    If you hummus is too thick, add a little bit of the liquid from the chickpeas - about a teaspoon at time. Other ways to thin out hummus is by using warm water or olive oil also.

    3 tablespoons of plain yogurt
    1 teaspoon parsley or cilantro, finely chopped (plus more for garnishment)
    2 tablespoons water
    Preparation:
    In a blender or food processor, blend the chickpeas. Add tahini, lemon juice, garlic, salt, and water until the ingredients form a paste-like consistency. Pour the mixture into a large bowl and add remaining ingredients, mixing well. Garnish with any remaining parsley or cilantro, cover and refrigerate about an hour.

    Thanks! the recipe I used had a ton of garlic! I like garlic but that just seemed to much. And my DH didn't care for my garlic fresh breath later!
    I wish I had some beans to use now, I'd make some.

    1 cup cooked kidney beans
    1/2 tsp of pureed garlic
    1/4 cup of white onions
    taco seasoning- to taste
    red pepper- to taste
    pepper- to taste
    1tablespoon of olive/veg oil
    About 3/4 Cup water or stock- add as needed beyond that

    Heat oil and add onion,garlic until onion turns clear
    Add kidney beans, water and taco seasoning, red/black pepper.

    Let simmer until all flavors combine and wallah! It's so yummy on a cold day!

    I just copied this and am going to try it with black beans. They are my favorite. I might even add some carrots, celery & peppers. Always trying to add more vegies!
