    I like simple chicken recipes the best.

    For boneless/ skinless breasts or thighs:
    - heat a small amount of cooking fat in a skillet.
    - pat the chicken dry and add salt, pepper, and a dried seasoning or two. (Endless possibilities: garlic powder, onion powder, celery salt, paprika, basil, oregano, cumin, red pepper flakes).
    -add the seasoned chicken to a hot pan. Cook until done, flipping every couple of minutes. Browning is a good thing because it seals in the juices.

    I've also heard that tenderizing the meat is important as it flattens it out and helps it to cook evenly. Been too lazy to run out and buy a tenderizer myself though. If you do, let me know how it goes.

    Mix equal parts of honey and Dijon mustard with a bit of thyme or rosemary and black pepper. Cover chicken and bake.
    Crockpot salsa verde - chicken and salsa verde in the crockpot until done.

    The honey and Dijon mustard chicken sounds good!! Just cover it with the mixture and bake? For how long?

    It depends on the cut of the chicken. For boneless skinless thighs, it's usually about 2.5lbs in a package and I use 1/3 cup honey and 1/3 cup mustard. That bakes at 425 for 20 minutes.
