I'm trying to find that delicious pic of the egg in the baked potato with cheese/bacon on top to show my son options for breakfast. Anyone know what thread it was posted in?? It looked so yummy I have to show my family
Thanks for any help.

This really does look delicious! I almost put an extra baked potato in the oven so I could have one of these tomorrow but I'm out of bacon. Maybe next week.0

How do you make it?0

I make this often! Though, sans bacon. It's soooooo good. Here is the recipe I use:

I cook my potatoes in the microwave, lol. I know, I know...lazy! I make yukon gold ones though and they are so good. I can't wait to try this.0

First I bake a potato in the oven
Cut off the top and cut a hollow hole area for the egg
Break the egg into the hole, then put back in oven until egg is cooked to my desire- whites fully cooked, yolk still somewhat breakable/runny
Then I top it with half slice of bacon (already cooked ahead of time)
Chopped scallions
And just a tiny bit of shredded cheese (reduced fat mexican blend)
Pop it back in the oven to melt the cheese
Done!
