I got Ham...what else?

I'm not a big ham fan, but one way my mom used to fix it that I really liked was in a casserole with cauliflower and cheese sauce. You just lightly steam a bag of frozen cauliflower (or you could use fresh that you've cut into florets). Cube up the ham steak. Put the cauliflower and ham into a casserole dish and pour cheese sauce over it. Bake for about 20 minutes till it's bubbly and starting to get golden around the edges. (Cheese sauce can be easily made by putting 1/4 cup flour into a saucepan with about 1 1/2 to 2 cups of milk. Whisk till blended and cook until it thickens. Then stir in about a cup of shredded or crumbled cheese. Cheddar or any of the Italian cheeses work well.)

Or, how do you feel about eggs? You could do a nice ham and cheese (and maybe veggie) omelette.
