Knocked it out of the park with this breakfast!

I just wanted to share my yummy breakfast with you. I am always experimenting with breakfast foods and this one is a winner. I sauteed (I used pan spray and added a little bit of water as needed) 1 cup of cubed sweet potato and diced onion, added in 1/2 of an Old World Roasted pepper and onion with Asiago cheese sausage (Sam's club), salt, pepper and a little cayenne. Then topped it all off with a fried egg sunny side up. Oh, it was good and only 276 calories. Kind of like a hash, only MUCH healthier.

Stingray, yes we are 50 miles down I-44 from Joplin. I have many friends there. It is truly, truly unbelievable the utter devastation they have suffered. I have never seen anything even close to it in my life and I have lived in tornado ally since I was born. But the attitude of survivors and the tenacity they have shown is also unbelievable. Thanks for mentioning it. I know they appreciate all the prayers.0

I just made this for my wife and I for supper, I loved it, she would have preferred the sweet potatoes on the side :ohwell:
I used the following:
1 medium sweet potato (180g)
1/4 medium onion (79g)
1 samsclub fire roasted peppers and onions with asiago cheese chicken sausage
2 medium eggs (111g)
I cut the sweet potato into 1/4 in disks and then quartered those and threw them in the frying pan with some water on medium heat. Next, I cut up the onion and added that to the sweet potato. I then cut the chicken sausage into 1/4 disks, halved those, and added those when the sweet potato and onion were about done. Lastly, I stirred the eggs in a separate bowl and added them when the sweet potato and onion were to my liking.
When I entered mine into the food diary, it came up as 266 calories, but who knows when it comes to using veggies in there.0 -
Well, look at you! Getting all efficient and writing it out like that! I am glad you enjoyed it. The difference is probably in the way we entered the ingredients. I'll go with 266 instead of 276. : )0

I figured I would pass along actual portions. Of course, the entire reason why I did that was so that I could relay my thoughts on the portions, which I completely forgot about. :laugh: I can't go back and edit it now, oh well, I'll add them here where no one will read them.
Mine was for two people, which I thought was a good amount. I also made 9 stalks of asparagus to go along with it (more to use up than anything). I think it could have used another egg (or two) per serving since it was all mixed together and you couldn't taste the egg. Probably could have also used a little more onion, but it was still really good for a first try.0 -
