  • Kale strikes me as a poor mans cabbage. It just looks so sad and skinny leafed.

    I'm also afraid to try it as some of my kale eating friends are frankly a bit scary. Ha ha! Awesome job growing your own!

    Best kale salad ever:
    1 bunch kale (12-14 leaves)
    1 avocado
    1 lemon
    1 carrot shredded
    1/2 red pepper

    Chop kale into small pieces. Sprinkle with salt and lemon juice and massage. Add avocado and squish together and continue kale massage (so it's like guacamole with kale). Add shredded carrot and diced red pepper. (If it doesn't taste great: massage more, add a little more salt or lemon juice)

    No dressing needed! Brilliant, delicious...smugness may continue at an ever greater magnitude as you will be eating salad without dressing.

    I like kale and all, but I've come to find that I vastly prefer prepping collards. They're pretty much the same nutritionally, and they're much easier to clean and you can just fold them in half and use kitchen shears to remove the inner stalk. I like all the cole crops.

    Good on you for growing your own veg.

    Beautiful! The deer (& slugs, I think) really love mine so I have a hard time keeping it around.
