I make a variety of salads - roasted vegies, garden salads etc with tinned tuna, avocado, quinoa etc. Soups - I have a few vegetable soups on rotation, I cook them in bulk and freeze/defrost as required. Frittata - vegies and eggwhites with some fetta and steam vegies on the side. I mostly prepare lunches a few days at time. Plus my snacks - hardboiled eggs, green smoothies, fruit, greek yoghurt, air popped popcorn etc.0

Tuna salad wraps: tuna+eggs+mayo+pickles wrapped in a lettuce leaf then wrapped in a tortilla or any kind of thin bread. You could replace the tuna with shrimps if you wish, in which case ranch works better than mayo and onions better than pickles.0

I do a ton of soups. Making one or two huge batches usually keeps me set for 2 weeks (freeze 2nd week's). If you get bored with same things make smaller or multiple batches. So easy to pack because all you do is pull it out of the fridge.0
