Anyone know any easy to make vegan recipes?

    I'm vegan. I can try to help! first one is a lunch recipe:

    Ingredients:

    2 trader joes white corn tortillas
    1/2 cup of either Organic black beans, organic pinto beans, refried beans or refried black beans
    1/2 c of your favorite organic salsa
    handful of fresh cilantro (loosely chopped)
    1/2 c of daiya vegan cheddar cheese
    2 oz of guacamole (i use the individual guacomole packs from costco)

    assemble:

    tortilla, then 1/2 of the beans, then 1/2 of cilantro, 1/2 of the salsa and 1/2 of the "cheese" and repeat.
    cover loosely and microwave for two minutes! top it with the cold guacamole.
    It'll be hot but it's full of nutrition and protein - and tasty too. You can switch it up with fresh tomatoes, some green chiles (I love the Hatch green chiles), tomatillos etc.

    here's another:

    for breakfast, I make a protein packed smoothie:

    I use vegan protein powder - put in enough powder to equal 20 grams of protein (lots are on the market...you will need to use sample packs until you find one that you like)
    Nonfat soy milk 1/2 cup
    frozen fruits: 1/2 c. organic cherries, 1/2 c. blueberries (or any combo of frozen fruit totaling 1 cup)
    1 SMALL banana
    handful of greens ( I use and freeze the power greens from costco - they freeze well)
    stalk of celery (optional)

    put all in the blender and blend - add water to thin if you wish - it's a great breakfast on the go!
