My favorite *easy* summer salad

OH. MY. GOSH. I can't get enough of this. The dressing makes it.

Salad:
2 cups fresh spinach (14 cals)
5 large strawberries, sliced (29 cals)
1 oz blue cheese (80 cals)

Dressing: makes ~ 35 one-oz servings @ 69 calories per oz
blend in a blender:
1 cup olive oil
1 cup brown sugar
1/2 cup balsamic vinegar

    I've done the salad mix you listed w/balsamic vinaigarette but your dressing sounds delicious!

    I will be trying this. We are having a party Memorial Day weekend so we are trying to clean out the food in our refrigerator so the other day I made a salad of baby spinach, strawberries, blueberries, feta cheese and some of Newman's Poppy Seed Dressing....well, I will surely be putting that on the grocery list again. Man that was tasty!

    OH MY GOD!!! This salad was DELICIOUS!!!!!!!!!!!!!!!!!!!!!!!

    I changed the dressing to be 1 cup Olive Oil, 1 Cup Balsamic Vinegar, 1 Cup Water, and 1 cup Splenda Brown sugar blend. It works out to 88 cals. for a 2 Tbs serving. This makes a TON of dressing which is fine, its delicious!!!!!

    This was just the tastiest salad ive had in a LONG time! Thanks for posting it!!!

    I also use raspberry vinegar instead for the dressing and goat cheese for the salad with a sprinkling of toasted pecans. Beautiful summer salad!

    Can you make this and then freeze it? I'm looking for a salad that I can buy the ingredients when things are on sale, make the salad, and freeze it for future use. I hate buying fresh fruits and veggies b/c they always go to waste.I don't know much about freezing fresh veggies and fruits so I'm questioning all of the salad recipes I come across.

    I do a similar salad: spinach, 1oz feta cheese, strawberries and pecans. I make a strawberry vinaigrette: 1 tbsp olive oil, 1tsp Braggs apple cider vinegar & a few macerated strawberries. Whisk briskly until the dressing emulsifies and dig in!

    You can't freeze salad and thaw it out to eat as salad. You can freeze your fruit if you see it starting to turn bad and use in smoothies. You can also freeze spinach for later use.
