Freezable Breakfast Burritos

Thought I would share this recipe with you guys. I made some of these over the weekend for my boyfriend to eat on the way out the door, and he absolutely loves them! The best part is, he eats and I don't have to get up early and cook it for him. He just grabs one out of the freezer and microwaves it. Of course microwave time may differ between some people.

These are also like, extra tiny. So be warned. I use small fajita tortillas, feel free to use bigger, but your numbers will be different.

Ingredients:
No cal spray
9 eggs
2 tbs 2% milk
1 container Jenni-O lean breakfast turkey sausage
1/4 onion, chopped
2 garlic cloves, chopped
1 cup picante mild salsa
1 cup shredded cheddar cheese (I used Borden)
27 flour small fajita tortillas


Spray a high side pan with the non stick spray and sautee onion until soft. Add garlic and sautee until soft and fragrant. Add sausage to pan and crumble with spatula. While sausage is cooking, mix eggs and milk together. When sausage is no longer pink, add eggs and stir until scrambled. Add the picante sauce and cook out for about a minute. Add cheese and stir until melted.

Get your siran(sp?) wrap ready. Put 1/8 cup of egg mixture onto the bottom of the tortilla, wrap and roll. Roll siran wrap around it tightly. Repeat 27 times (this is why it takes an hour). I put a bunch of them in freezable bags, just so that they aren't floating around in my freezer.

Take it out when you want it, and heat it up in the microwave.


Hope you guys enjoy!! I will probably make these again, except with potatoes, bell peppers, chorizo, mushrooms... The possibilities are endless with this.

    Thanks for the recipe! We make something similar and take them camping! We wrap in foil instead of plastic wrap and either put them on the grill or in the coals of the camp fire. Have them for breakfast or dinner-we are the lazy type of campers! :) or maybe we just like to wander around instead of cook all day! :)

    I never thought about taking them camping. That's a great idea as well :)

    Yeah I wouldn't want to cook if I was with nature all day.
