Quinoa Recipes?

Do you have a favorite low fat Quinoa recipe? Many of the recipes I'm finding online call for a lot of butter or oil. Any alternatives out there? Thanks!!

I make a variation of this that is more like risotto by adding about 1/2 cup of chicken stock and a splash of white wine.

I tried a variation of the above last night, minus egg but added peanut butter. Pretty nice, just make sure your quinoa cooks through properly. Next time, I'll probably cook it separate. I also used a small amount of coconut oil instead of all of that olive oil, as I had a non-stick pan it wasn't a problem.

The casserole below I found too, but have yet to try, looks good though!

I love these Quinoa "meat"balls and they freeze wonderfully.

I also like this Enchilada bake (similar to what Danietta posted above).

These Quinoa spinach patties are awesome and can be frozen for quick meals too.

I like to make a cold quinoa salad . I cook the quinoa in chicken stock if I have some handy or if not just water is fine. Let it cool and throw in some diced veggies (avocado, celery, corn, black beans or garbanzo beans, tomatoes, lettuce or spinach if I have any, beets, etc..) . Then I toss it with a homemade lemon dressing. Delicious, filling and nutritious.
