Happy herbivore cookbooks are great! I think there are some free recipes on the website too.

I've also tried a couple recipes from the forks over knives website - good stuff! http://www.forksoverknives.com/

I'm neither vegan nor vegetarian but I try to eat clean and I love veggies and nuts etc so often make recipes which are vegan. Have you tried Deliciously Ella? There's a website and a cookbook - Ella Woodward is her name and I've tried a few of her recipes with success :)

Also I have a book called "Superfoods: The Flexible Approach to Eating More Superfoods" by Julie Montagu which contains entirely vegan recipes.

A lot of other recipe sites I use are gluten and dairy free (I'm not intolerant to dairy, I just prefer coconut or almond milk to regular milk) and there would be easy substitutions for fish / meat to make the recipes vegan. Try Madeleine Shaw's website, every recipe I have made on there has been very good and she occasionally makes reference to switching things for vegetarians/vegan e.g. salmon for avocado... Just thinking what I would recommend on there... There's a fab veggie chilli with raw cacao and guacamole on there which is vegan which I've made loads. And I make the Mexican salmon with chilli lentils and quinoa regularly but you could sub sliced avocado for the salmon and use dairy free yogurt on the top. The chocolate peanut butter brownie cake is to die for and is vegan. Loads of breakfast recipes which use non dairy milks with oats, quinoa etc. There's a tomato and chickpea curry which is very good and filling, which I make with spiralized courgettes. And loads more but they are the obvious vegan (or easily changed to be vegan) ones that stand out in my mind :)

    Hope that helps x
