    Leftovers oatmeal (or any grain: I've also used quinoa, barley, farro, etc.). I generally have a pot of pre-cooked grains like this, and the night before I'll parcel out a serving in a microwaveable bowl with some chopped veggies like mushrooms, frozen spinach or broccoli, onions, cherry tomatoes or sun-dried tomatoes.

    In the morning I'll add a slice of deli cheese and maybe an ounce of leftover meat and heat it up in the microwave. And if I've got time, I'll poach an egg or two to go with it. Lots of variations:

    1. Chicken or pork, bbq sauce and mushrooms, spinach, swiss cheese
    2. Pepperoni slices, mushrooms, tomatoes and mozzarella (pizza oats!)
    3. Chicken, broccoli and onion, cheddar.
    4. Your favorite here.

    avocado on toast topped with sunny side up egg...or sauteed mushrooms on toast topped with egg...basically something + toast + runny egg is super good. Or substitute the toast for quinoa / polenta etc. also delicious
