Party Size Fresh Salsa

3 lbs Roma Tomatoes
1 large White Onion
3 Anaheim Peppers
1 small bunch Cilantro
3 cloves garlic
3 Limes
1/4 cup Salt

Remove stems from all vegetables. Peel the onion. Mince the garlic, Juice the limes.
Combine all ingredients in a food processor until pulsed to desired consistency.
Serve chilled with tortilla chips.
Tastes best after 24 hours, to let the flavors mingle.
Store in refrigerator or freeze in smaller portions.

I freeze these in small snack bowls and toss them in my lunch bag to keep it cool, its thawed by lunch.

    That sounds yummy but what are anaheim peppers? Can you tell I don't cook :smile:

    lol... they're like banana peppers only green... banana peppers will work with this recipe too... as will jalepenos... i just like the medium heat the anaheim ones give.
