Do I count oil used to cook my pancakes?

Every morning I wake up and make banana pancakes (2 eggs,1 banana) and cook them in 1tbsp coconut oil. Do I count these calories as coconut oil is calorie dense bus has good fats?

    They are still calories and I suspect most, if not all, is absorbed during the cooking. So yes, I would.

    If your pancakes absorb the coconut oil then, yes, you should count those calories.

    Read the box of pancake mix (ingredients list).
    Many still contain hydrogenated fat - trans fat. Avoid, Avoid, Avoid.

    But OP is using bananas and eggs only?

    Of course! If you're counting calories you count ALL the calories for all the things you eat and drink.

    Cooking oil is an easy hundred calories every day. If you are generous with it, a couple hundred.

    Definitely! Weigh the bottle before and after you pour in the oil and log the difference. It's being used so needs to be logged!
