Crockpot Chicken & Veggies

:wink: Someone post a recipe for crockpot chicken and veggies a few days back and I have searched and searched and can't seem to find it. Can anyone help me locate it?

I know it has a sour cream & squash in it.

Thanks in advance for anyones help.

    Crockpot Creamy Chicken and Veggies


    Makes 6 servings


    Easy, low fat crock pot chicken and veggies recipe.

    Ingredients
    1 lb boneless/skinless chicken breast
    2 pounds small red potatoes, cut in half
    1 pound baby carrots
    1 pound squash
    1 cloves garlic, minced
    2 cups low sodium chicken broth
    1/2 cup light sour cream
    3 tbsp flour
    1/8 tsp white pepper
    1/2 tsp dried thyme leaves
    Directions
    In 3-4 quart slow cooker, place potatoes and carrots. Top with chicken. Pour chicken broth over all. Cover crockpot and cook on low for 8-9 hours until chicken is thoroughly cooked and vegetables are tender.In small bowl, stir together light sour cream, flour, pepper, and thyme until well blended. Stir into mixture in crockpot and turn heat to high. Cook for 15-20 minutes, stirring occasionally, until thickened. 6 servings

    Umm. Sounds good. But I am not the world's best chef. :noway: Where does the squash and the garlic go in? Am I dicing the squash or pureeing it? Help! :huh:

    This sounds good, but doesn't tell you when to put the squash or garlic in. I am assuming at the beginning with the potatoes and carrots. Also did you cut up the squash in cubes?

    I tried this for today. Of course I had to put my own spin on it. It cooked overnight in my crock pot and I brought it into the office this morning for lunch. The crock pot is just about empty now. My employees LOVED it.
