I am going out of town. We almost always go out to eat at every meal. Anyone have advice how to stay on track?

Do a search for 'restaurant'. Tons of threads there.

If you've been doing this for a while, you probably know what's more & less calorie-laden. If you don't see anything on the menu that seems suitable, consider doing several sides (like if the restaurant offers different veggie sides, sometimes they're willing to make a plate of these).

I'm vegetarian, have been for over 40 years (!), and have found that if you ask pleasantly about alternatives, a lot of restaurants will accommodate, even non-fancy ones.

I'd try something like "I was hoping for something a little lighter; is it possible to get the fish/chop/whatever without the sauce?" (or grilled instead of fried, etc.). Many will vary what's in a salad, too (leave off the fried whatever, switch the dressing & serve it on the side, omit croutons, that sort of thing).
