Need help becoming a vegetarian!

I'm a student so I won't have much time to cook. I've decided to cut out meat and poultry and cut down on wheat and dairy for intolerance reasons. I got so used to turning everything into a sandwich. I'm a sandwich *kitten*...
I need healthy fast vegetarian recipes. And what do snack on ? So you recommend Any books or websites? Thanks!

    If you want to stay on the sandwich course, try using romaine lettuce as your wrap. Or, if you're still eating corn, try corn tortillas.

    Other easy things: Peanut butter on an apple. Bean salad (beans + veggies + vinaigrette dressing - or I just use vinegar plus some seasoning like mustard or herbs, sometimes). Quinoa + veggies. Refried beans with chopped onions & red or orange peppers - sometimes I just eat these with a spoon. Sliced eggplant, baked or broiled until soft, then roll up seasoned mashed-bean filling inside.

    Salads with nuts or seeds (watch the portion size of nuts/seeds). Edamame. Dry-roasted soybeans for snacks. Tempeh - I like it stir-fried with veggies. Bean or pea soup (I make huge pots & freeze in portion-sized glass containers). Spagetti squash with toppings. Baked potatoes with toppings. Veggie shepherd's pie. Baked cabbage rolls stuffed with grain, nuts, veggies.

    If you're ovo-lacto vegetarian, eggs - hardboiled are easy to carry (chilled if for a long time).

    Check out Indian food (veggies, nuts, sauces, rice), Mexican food (beans, rice, corn, sauces), middle eastern food (think about subbing quinoa, brown rice or other grains for the wheat components), some African food (think peanuts & veggies) for good vegetarian eats.

    I've been ovo-lacto vegetarian for over 40 years. It gets easier over time, much easier.

    Smoothies are quick and an easy way to get in the calories you need in the morning. Fruit is great to bring along as a snack, comes in it's own package :) Check out my links above for other food ideas.
